With the Save the Emmentaler brand, we convey what makes an original and genuine Emmentaler. Our mission is to promote Emmentaler and the cheese makers from small cheese dairies, the associated decentralized structures and a 700-year-old craft. Not simply for nostalgic reasons and traditions, but also to preserve the quality of a genuine natural and authentic product.
King of cheeses
The original
Emmentaler AOP is not called the "king of Swiss cheeses" for nothing. A wheel weighs 200 lbs, has a diameter of 30 inches and has characterizing holes. So iconic in its form, when children draw a cheese, they will draw an Emmentaler. Its history goes back to the 13th century and still today the original is made by us, the Gourmino cheesemakers, as it was then.
The protection of the brand was neglected for a long time. That is why Emmentaler is the most copied cheese in the world. Within the Gourmino range, you will find original Emmentaler specialties that you can't find anywhere else.
What makes us unique:
Gourmino was founded in 2001 by 5 Emmentaler cheesemakers. Even then, they held on to the original recipes and methods for Emmentaler production. Today they still produce as in Jeremias Gotthelf's time and put the uncompromising quality of their natural product at the center of what they do.

Affinage in the Mountain
Our affinage in the mountain is unique. In Reichenbach, at the foot of the Blüemlisalp, exists a perfect and natural climate for the Emmentaler Surchoix and Réserve (up to 24 months).

Exclusivities
Rahmtaler and Gotthelf Emmentaler are both produced exclusively by Gourmino cheese dairies. These are centuries old original recipes, the production of which our cheesemakers have never abandoned.

Gourmino produces only originals
The Gourmino does not produce or trade any of the Emmentaler copies. Our cheese are molded into round, 200 lbs forms and are made according to original recipes and production methods in village and mountain cheese dairies.

Not all Emmentaler is the same. The original recipes of the specialties Gotthelf Emmentaler and Rahmtaler are produced exclusively by Gourmino village and mountain cheese dairies. They offer our customers an exciting assortment differentiation in addition to Emmentaler Mild, Surchoix and Réserve.
We do not simply trade Emmentaler. We handcraft, age and select specialties for our customers that expand the individual assortment and correspond to the desired character and taste profile. This is because not all Emmentaler is the same.
